Perfect with roasted chicken, grilled fish, or layered into a breakfast bowl with eggs and potatoes. Also a great way to get your greens without boring your taste buds.
Ingredients
-
1 tablespoon olive oil (or butter)
-
1 clove garlic, minced (optional for extra punch)
-
6 oz baby spinach (about 4 packed cups)
-
½ cup diced onions (optional)
-
½ teaspoon Pryme Thyme
-
¼ teaspoon Spicy Garlic Dust (or more to taste)
-
Salt to taste (optional, but you probably won’t need it)
-
Squeeze of lemon (optional but recommended)
Directions
Heat olive oil in a large skillet over medium heat.
If using add onions to skillet and sauté for 2-3 minutes to soften. If using fresh garlic, sauté for 30 seconds until fragrant.
Add the baby spinach and toss with tongs until it begins to wilt—about 1–2 minutes.
Sprinkle in Pryme Thyme and Spicy Garlic Dust. Stir gently to coat all the leaves.
Cook for another 30 seconds, just until fully wilted and tender.
Finish with a squeeze of fresh lemon juice if you like a bit of brightness.
Recipe Note
I like to let the final dish cool then chop it up and mix into frittatas with ground lamb and onions for a yummy mediterranean inspired meal!
