Bright, fresh cilantro lime rice made with jasmine rice, lime juice, and To Taste seasoning. A simple side that goes with everything.
Ingredients

1 cup jasmine rice

1¾ cups water

2 oz fresh lime juice or juice of 1 lime (for cooking)

2 oz fresh lime juice or juice of 1 lime (for finishing)

1 tbsp salt

Zest of 1 lime (large strips)

Handful of cilantro stems (whole)

Fresh cilantro leaves, chopped

2 tbsp neutral oil (grapeseed or olive oil)

2 tsp To Taste seasoning

Optional: finely chopped fresh mint
Directions
Rinse rice if desired (optional).
In a pot, combine water, 2 oz lime juice, and salt. Bring to a boil.
Add rice, reduce heat, and cook for about 17 minutes, or until liquid is absorbed.
In the final minute of cooking, add whole cilantro stems and lime zest. Turn off the heat. Cover and let sit for 5–10 minutes.
Remove and discard cilantro stems and lime zest.
Transfer rice to a bowl. Add oil, chopped cilantro, To Taste seasoning, and optional mint. Mix well.
Add remaining 2 oz lime juice and stir until fully combined.
Taste and adjust if needed. Serve warm.
Recipe Note
- Rinsing the rice will give a lighter texture; skipping it makes it slightly stickier
- Adjust lime juice to your preference
- Use a vegetable peeler to get the lime zest in large slivers
- Mint adds a fresh twist but is optional
- Works as a base for bowls, tacos, or grilled meats
