Live crawfish, cleaned
-
Water
-
Malt Liquor (optional)
-
Boil seasoning (such as Louisiana crab/shrimp boil)
-
Onions, halved
-
Lemons, halved
-
Whole garlic, halved
For Finishing
-
Butter (melted)
-
Garlic Dust
Directions
Build your boil
Fill a large pot halfway to ¾ full with water and or malt liquor, if using
Add boil seasoning, onions, lemons, and whole garlic. Season the water heavily—more than you think you need.
Bring to a rolling boil.
Add crawfish
Add cleaned crawfish to the pot and cover with a tight-fitting lid.
Boil for 5 minutes only.
This is where the magic happens - SOAK
Turn off the heat and keep the lid on.
Let the crawfish soak for at least 20 minutes.
The longer they soak, the more flavor they absorb without overcooking.
Taste and adjust
After soaking, stir and taste one.
If you want more heat or flavor, cover and let them soak longer.
Finish your way
Drain the crawfish.
You can serve them as-is, or take it a step further:
Toss them in melted butter mixed with Garlic Dust (or Spicy Garlic Dust) while still hot. Mix until coated.
Serve immediately.
Recipe Note
Crawfish cook quickly so they truly only need a few minutes of a rolling boil
The soak is where the flavor builds, so the more flavorful the water the more flavorful the crawfish.
Spicy Garlic Dust works especially well for finishing
This method works for gatherings, parties, and backyard boils
You can also use this finish on shrimp or crabs
