This Spicy Garlic Dust quinoa recipe proves quinoa doesn’t have to be bland. Cooked in broth and tossed with bold seasoning, it becomes a flavorful quinoa side dish that pairs perfectly with grilled meats, roasted vegetables, or simple weeknight meals. It was even a hit at the State Fair, where people kept coming back for seconds.
Ingredients

1 cup uncooked quinoa (yields ~3 cups cooked)

1.5 Tbsp Spicy Garlic Dust Seasoning

1.5 Tbsp olive oil

1 Tbsp lemon juice (fresh preferred, or use white/red wine vinegar) optional

½ cup diced peppers & onions

¼ cup dried cranberries

¼ cup chopped English cucumber
Directions
Cook the quinoa according to package directions; let cool slightly. Use chicken broth or veggie broth for an extra kick of flavor
In a large mixing bowl, whisk together Spicy Garlic Dust, olive oil, and lemon juice (or vinegar) if using.
Stir in peppers, onions, dried cranberries, and chopped cucumber.
Fold in the cooked quinoa and mix well until fully combined.
Taste and adjust seasoning with more garlic dust, lemon juice, or salt as desired.
Serve chilled or at room temperature.
