Ingredients

1 lb of spaghetti or any long thin dry pasta

1 lb of 16-20 ct shrimp, peeled and deveined

¼ cup of diced onions, fresh or frozen

¼ cup of diced green peppers, fresh or frozen

1/4 cup extra virgin olive-oil
-
1 cup of white wine, optional (I like using a sweet wine)

8 cloves of garlic, minced
-
2 tbsp of butter
-
kosher salt
-
1 tbsp spicy garlic dust
-
pepper
-
¼ cup grated parmesan cheese
-
crushed red pepper, optional
-
chopped fresh parsley, optional
Directions
Cook pasta according to package directions don't forget to add salt. Drain and reserve 1 cup of pasta water.
In a medium sized pan, heat approximately 2 TBSP of oil, swirl to coat. Add onions and peppers to the pan and sauté for 3-5 minutes. Add garlic for the last minute., season with spicy garlic dust. Move to plate.
Sprinkle the shrimp with salt and pepper on both sides. In the same pan add the rest of the oil and sauté the shrimp in small batches for a minute on each side. They will not be done.
Add all shrimp, onions, peppers and garlic back to the pan. Lower heat and add white wine. Simmer for 5 minutes to let the alcohol cook off and reduce. Add crushed red pepper to taste.
- Turn off heat and add pasta to pan. Toss to coat. Add pasta water if too dry.
- Sprinkle with parsley.
