Dirty Rice is one of those Louisiana classics that proves you can make a lot with just a little. It’s hearty, soulful, and packed with flavor in every bite. The secret ingredient? Chicken livers or giblets 🐓 the part most people skip but shouldn’t. They’re what give the dish that signature “dirty” color and rich depth of flavor. Trust me, the taste isn’t bad either 😂.
This version of Dirty Rice brings together ground beef, ground pork, and chicken giblets, but feel free to play around. Swap in any ground meat you like, just remember, if you use a lean white meat like turkey or chicken, add a little extra fat to keep it flavorful. Because let’s be real: the flavor lives in the fat.
And to make it Tasty Tin’ified, I season my meat and veggies with Spicy Garlic Dust it gives everything that bold, garlicky kick that makes the dish pop.
Ingredients
- 2 tablespoons fat (oil, butter, or bacon drippings)
- ½ lb. ground beef
- ½ lb. lean ground pork
- 1 lb. raw chicken giblets
- 2 medium onions, chopped
- 1 cup chopped celery
- ½ cup chopped green pepper
- 1 large clove garlic, minced
- 4 tablespoons flour
- 2 tablespoons Tasty Tin Spicy Garlic Dust, divided
- 4 dashes each of Tabasco and Worcestershire sauces

2 cups rice, cooked (we use Long Grain Rice)
- 1 bouillon cube

Directions
- Cook your rice separately and set aside.
- In a large skillet, heat the fat over medium heat. Add flour and stir constantly until it turns a rich brown color to form your roux.
- Add onion, green pepper, and celery. Cook until slightly wilted, then season with 1 tablespoon of Spicy Garlic Dust.
- Add ground beef, pork, and giblets. Cook over medium heat until the meat is browned and cooked through.
- Dissolve the bouillon cube in water and add enough to the pan to create a thick, gravy-like mixture.
Stir in garlic, Tabasco, Worcestershire, and more Spicy Garlic Dust to taste. Adjust with to taste or more spicy garlic dust
- Simmer on low for about 30 minutes, letting all the flavors come together without drying it out.
- Combine with the cooked rice and mix well.
