🍋 Squeeze the Day: Zesty Winter Citrus Recipes to Brighten Your Meals! 🍊

Hello, Citrus Lovers!

Here in Minnesota, it's cold outside, but our kitchens are warming up with the vibrant zing of winter citrus! While the skies may be gray, your plates don't have to be. Let's infuse some sunshine into our meals with the season's best-kept secret: Winter Citrus Fruits. 🌞🍋

Winter is the citrus season's time to shine and one of my favorite things about this season, offering a variety of fruits that are not only packed with vitamin C but also perfect for adding a fresh twist to comfort foods and healthy options alike.

My three favorite citrus fruits are Ruby Red Grapefruits, Blood Orange and Meyer Lemon.  All three are rich in color and antioxidants.  Even if you have one to squeeze into your next week, I promise it will elevate your dish with a freshness you can’t pinpoint!

Here are some juicy ideas to citrus-ify your meals!

Breakfast: Rise & Shine with Citrus

Start your day on a bright note with a Grapefruit Brûlée. A touch of brown sugar and a minute under the broiler transform the fruit into a caramelized delight. Pair it with a sprinkle of Cinnamon for a comforting yet healthy breakfast. Or go old school and slice one in half and sprinkle with sugar for a refreshing breakfast.  Don’t forget your grapefruit spoons!

Lunch: Citrus in Salads

Add segments of Blood Orange or Meyer Lemon to your greens for a sweet and tangy punch. Toss in some Garlic Dust-sprinkled avocado slices for a flavor combo that'll make your tastebuds dance.

Dinner: Slow-Roasted Sensations

As the stars come out, let's turn the oven on. My personal favorite, Slow Roasted Salmon with Fennel, Meyer Lemons, Oranges, and Jalapeños, is a dish that's sure to impress. The citrus not only adds incredible flavor but also keeps the salmon moist and tender. Head over to my website for the full recipe and let the oven do its magic!

Snack Time: Zesty Citrus Salsa

Mix diced Mandarins or Tangerines with red onion, cilantro, and a hint of Garlic Dust for a quick salsa that's a perfect topper for fish tacos or a vibrant dip for tortilla chips.

Dessert: Citrusy Sweet Treats

Lemon bars with a twist? Yes, please! Substitute your regular lemons with Meyer Lemons for a milder, sweeter version of this classic dessert. Or, if you're feeling adventurous, how about an Limoncello Poundcake?  Check out the video on how to make this awesome cake!

These citrus delights are not only delicious but also align with your New Year's resolution to eat healthier. 🌿They're the ultimate companions for those looking for comfort food with a healthy spin.

Remember, while the winter chills linger, there's no reason for your meals to be dull. Let's zest up our diets with the lively flavors of winter citrus—nature's reminder that the warmest colors can come from the coldest seasons.

Stay warm and zesty,
