Macaroni & Cheese – Updated

We will post our old school recipe/video soon but this one uses a much more diverse mix of cheese. But however you make it the basis of the recipe is always the same. And no you'll never find ham or veggies in ours. Macaroni and cheese is and forever will be a side dish in our family. But enjoy it as a meal if you'd like.

 1 lb dried pasta, cooked al dente according to package directions
 2 cups whole milk
 2 cups heavy cream *optional, substitute whole milk otherwise
 2 cups shredded cheddar cheese
 1 cup shredded gouda cheese
 1 cup shredded gruyere cheese
 1 tbsp salt
 ½ tbsp black pepper *optional
 1 tsp ground mustard *optional

Preheat the oven to 400° or your broiler to HIGH.

In a small saucepan, heat milk (and cream if using) gently over low/med-low heat. When milk/cream begins to steam but before it boils, add cheese in 1/2 cup at a time. Whisk to help incorporate cheese as it melts. Repeat until all but 1 cup of cheese remains (leave for a topping).

Add salt, pepper and ground mustard to cheese mixture.

In a large bowl combine pasta and cheese sauce. Mix throroughly. Put in an ovenproof dish. And top with reserved cheese. (sprinkle with paprika 😉 )

Bake in the oven for 15-20 minutes or until the top is melted and golden. Or broil on HIGH for 5-7 minutes until the top is melted. Serve immediately!
