Cilantro Lime Rice

This quick and easy side dish works well with any type of grilled meat or seafood.

 1 cup rice, basmati or jasmine work well
 2 cups water
 1 tsp kosher salt
 1 lime, juiced
 1 tbsp grapeseed or canola oil
 1 bunch of fresh cilantro
 ½ bunch of fresh mint, optional

Cook rice according to package. Or in a pot with a tight fitting lid, boil 2 cups of water. Add salt to water. When the water comes to a boil add the rice, cover and lower the heat to a simmer. Let rice cook 15-20 minutes, until all the water has been absorbed

Fluff rice with a fork. Add 1 TBSP of oil. Mix well to coat evenly

Add in lime juice and cilantro. Mix again to incorporate main flavors. Let rest for 5 minutes

Finally add mint and add additional salt or pepper to taste. Serve warm with your favorite protein!
